Day 21 Pumpkin Chocolate Chip Ice Cream

Prep Time: 15 minutes
Chill Time: 30 min
Ice Cream Maker Time: Approximately 25-30 minutes
Makes: 1 1/2 quarts

1 3/4 cups pumpkin puree
3/4 cup brown sugar
2 1/4 teaspoon pumpkin pie spice
1 cup heavy whipping cream
1 cup half and half
2/3 cup semi-sweet chocolate chips
2 broken graham crackers

1.Whisk together pumpkin puree, brown sugar, and pumpkin pie spice in large batter bowl.
2.Stir in heavy whipping cream and half and half.
3.Strain through mesh strainer to remove pumpkin pulp.
4.Chill in fridge for at least 30 minutes.
5.Pour into ice cream maker and mix about 25-30 minutes or according to manufacturer's instructions.
6. Transfer ice cream to freezable container. Stir in chocolate chips and graham crackers. You can eat immediately for soft serve or transfer to freezer for more traditional ice cream. Use Pampered Chef's amazing ice cream scoop for the easiest scooping of hard ice cream!

  1. Carrie, I can't wait to try this recipe!!! (I'm not sure how big my ice cream maker is though, but I will have to dig it out.) I've been looking for a pumpkin ice cream recipe, but hadn't found one that seemed like the ingredients I wanted. I was surprised that there are no eggs in this one. It looks easy though. Thanks for sharing.

  2. Kim, I specifically choose this recipe because of the lack og egg. I do think texture wise a recipe using egg might be a little better but I love the flavors in this one. I was really trying for easy but if I do it again I might try another recipe using egg and then add the chocolate and graham crackers after. Let me know how it turns out.

  3. Hey Carrie, I just unpacked my ice cream maker just for this recipe, but I'm wondering if you have a recipe with the eggs. (I've had the hardest time finding pumpkin ice cream recipes.) Could you send it to me? I think I will try both. I'm going to the store in a minute and I'm going to get the ingredients for this recipe. So excited. =) PS: I have some questions about your PC knives, but I'll either send you a facebook message or call you if I'm too lazy to write it all out. I think I want a couple of new knives but it will probably be what a month or two - when I have my Christmas gift money to spend. :)
